Birthday Cake

Little Jim's Birthday Cake (sponge cake) recipe.

Set the oven to moderate, 4 or 180. Cream the margarine and sugar then beat the eggs in one at the time. Fold the flour into the creamed mixture add tablespoon of milk.

Put into lined tin. Cook until well risen. Test by pressing gently with a fingertip, if it feels firm and springy then it is ready. Times will vary according to type of oven but give it at least 45-50 mins and don't open the oven fully until it is well browned or it will collapse. Leave in the tin for 5 mins. And then remove carefully and place on a cooling rack. When cold slice in half and add either jam or butter icing. Ice and decorate.
