Chocolate Cake

Little Jim's Chocolate Cake recipe.

Heat oven to 180 or 4. Oil and lin a cake tin -if you want a larger cake increase the ingredients proportionally i.e. 6-6-3-8 or 8-8-4-12. Using an electric mixer cream your fat and sugar until light in colour. Add the eggs beating well between each one. Sift the cocoa powder in with the flour then add to the mixture with the milk, being careful to fold in with a knife and not squashing out the air from the mixture. Place into the tin and level off.

Put into the centre of the oven and leave until it is well risen - at least 40 minutes and possibly more. The colour is difficult to judge because of the cocoa powder but wait to do the fingertip test until you are fairly sure by looking at it to see that it has set. The time does depend very much on your oven and of course on the size of your cake. Remove from the tin after about 5 minutes and place on a rack to cool. Split open when cold and add butter icing, dredge the top of the cake with sifted icing sugar.
