Flapjacks

Little Jim's flapjack recipe.

Oil a flat tin approx 7 by 11 inches. Melt, but do not boil the margarine, brown sugar and syrup in a saucepan. (not on the highest heat or you will burn the pan.) Tip in the oats when the mixture is ready, stir in thoroughly. You can add mixed spice or dried fruit. You get a different texture if you use soft dark sugar rather than demerara sugar (see Blox recipe).

Cook at a temperature of 180°C/350°F/Gas Mk4 for about 20 minutes or whatever, depending on how you like them. Cut into 16 pieces while they are still hot, but leave till they are cold to take out of the tin. If you haven't oiled the tin properly you might have problems getting them out.
