Mix-Quick Chocolate Cake
[Hubbard Family Favourite ...especially with RAH who hates washing up] This cake is mixed in the tin you cook it in. And it ALWAYS works! I use an 7 inch or 18cm deep round tin with the quantities below.
Dry Ingredients:
- 9oz self raising flour
- a pinch of salt
- 3oz cocoa powder [not drinking chocolate as this is weaker and has sugar already added]
- 9oz sugar
Wet Ingredients:
- 9 tablespoons cooking oil [not olive oil; something like sunflower is best]
- 9 tablespoons cold water
- 3 large eggs [If I have only small eggs I sometimes add an extra one]
Instructions:
Mix all of the dry ingredients in a cake tin. Mix REALLY well or you get white streaks like marbling through the cake, and it tastes Yuck]
Slop in the wet ingredients
Mix it all together really well, ensuring that no flour remains in the corners. Cook gas mark 5, [190( C or 375( F] for one hour.
When cool, cut in half and sandwich together with buttercream icing, [Butter, icing sugar and a dash of milk all creamed together. I usually add 1 tsp vanilla essence or very strong instant coffee] For specially indulgent days also top with vanilla buttercream and then stick an entire packet of mini Rolos or Maltezers all over the top. Yum!
