Savoury Chelsea Buns
Little Jim's bacon, cheese and onion Chelsea Buns - makes six.
Ingredients:
- 12 oz strong bread flour
- 1 1/2 tablsp of oil
- Sachet of yeast
- Salt
- 1 oz of sugar
- 1 egg
- 10-12 fl oz of warm milk
- 1 medium onion
- 4 rashers of bacon
- dried mixed herbs
- 4ozs of cheddar cheese
Instructions:
Mix the flour salt and sugar in a bowl and warm for 1 minute in the microwave. Add the yeast. Warm the milk in the microwave-30 secs and then check. Make a well in the centre and add beaten egg and enough milk to make a soft, but not sticky dough. I found I did not need all that milk, but if it is too sticky put a fair sprinkling of flour on your board and flour your hands well. Knead the dough as usual and leave to rise.
Fry the chopped onion and chopped bacon together in the oil, add the herbs and leave to cool.
When the dough is ready knock it back as usual and then roll it out to a 12 inch square-this is larger than you think so measure it if possible. Spread the onion and bacon mixture on top and then add the grated cheese. Then roll up evenly, moisten one edge with milk and pinch it together to make a sausage shape. Cut into six pieces and place sides down on a greased baking tray. Leave to rise.
Heat oven to 220ºC and bake for 20-30 mins in a conventional oven (less in a fan oven). Cover with foil half way through or the outsides will burn before the inside is cooked through.
Best eaten warm, can be reheated in the microwave, but only need about 20 secs.
