Shortbread biscuits

Another of Little Jim's legendary recipes.

Ingredients:

Place margarine and butter in a bowl and beat well.

Gradually add icing sugar and beat well until the mixture is light and fluffy

Then work in the two sifted flours and the cornflour. Knead lightly to make a smooth dough.

Wrap the dough in foil and refrigerate for 30 minutes.

Heat oven to 180 degrees centigrade. (Conversion tables for gas and for weight will be in your cookery book.)

Roll your dough into a sausage shape and roll in brown sugar. I'm not sure of the amount as I made this part up myself and I just use what I need and stick what's left back in the jar. Cut into biscuits and press into more brown sugar.

Cook until lightly brown and leave to cool on a wire rack..

Timing these is difficult because it is very much according to taste. They won't suffer if you open the oven door to check what they look like.
